For this Meatless Monday, I’m going to share with you a completely disgusting but-oh-so-delicious meal that you would never think to make. I came across a similar recipe using chicken breasts, but omitted it because the lifestyle plan I’m currently undertaking (Eat Right 4 Your Type) says that chicken is super hard for my body to digest.
As unappealing as this sounds, my children absolutely loved it. They ate almost two full servings of it AND requested it for lunch. You can’t go wrong with a meal that pleases everyone.
Stovetop Stuffing Soup over Steamed Rice
- 1 cup Stovetop Stuffing Cornbread
- 1 can of Cream of Chicken Soup
- 1/2 cup white cooking wine
- 1/4 cup melted butter
- 4 slices of Swiss cheese
Mix wine and soup in a glass baking dish. Mix stuffing mix with 1/4 cup butter and top over soup. Place cheese on top and bake at 350 degrees for 25 minutes. Serve over steamed rice.
